Chestnut Chocolate

This tablet is a true labour of love. It has been infused with chestnut black tea for over 48 hours. It is then served with bits of the same toasted tea as crunchy bitter flakes that provide both textural and flavour contrast to the sweet milk chocolate. Finally the tablet is dotted with caramelized organic chestnut chips and coarse sea salt to bring a sense of balance that is central to the work at Ether. It includes Ghanaian Milk Chocolate, Candied Chestnut and Toasted Black Tea.
